Past and Present

Paulaner obtained its name from the Italian monastic order of St. Paola, which settled in the heart of what is now Munich in the early 17th century. During Lent, the God-fearing brothers brewed a rich and powerful strong beer which served them as liquid bread: Paulaner Salvator. The high quality and the outstanding taste of the Salvator, which the monks sold to the population of Munich for a small charge, soon spread like wildfire. The secular brewers in Munich feared this competition. Their letter of protest of 1634, which is deemed the first documentary mention of Paulaner beers, was to prevent public sale. The monks only received an unlimited right of sale from the Electoral Prince 150 years later. In gratitude, the first mug of the strong beer is given to the political leader of Bavaria even now at the so-called “Salvatorprobe” (Salvator tasting). At the same time, this ceremony is the start of Lent. Nowadays, Paulaner is the largest brewery in Bavaria and one of the leading specialist breweries in Germany.

Hard rules and soft water

Paulaner beers are brewed according to the Bavarian Purity Requirement of 1516, the oldest food law in the world. It only permits barley, hops, water and yeast for brewing. But an ingredient is not automatically used as an ingredient, which is why Paulaner only uses the best: summer barley with the best viability values, starch and protein content, the best aromatic hops from the “Hallertau” and untouched glacier water from a depth of 240m. The quality of the yeast has a quite decisive influence on the fermentation process. It determines both the alcohol content as well as the aroma of the beer. For this reason, Paulaner exclusively uses yeast from its own cultivation, which is particularly pure and is produced in a unique yeast propagation system. The result of the Paulaner art of brewing is astonishingly varied and offers the right beer for every epicure and every occasion. The assortment ranges from deep golden, aromatic festive beers via the powerful Salvator strong beer and the palatable dark to slightly tart Paulaner Original Münchner beers right down to the refreshingly sparkling Bavarian wheat beer specialities.

The Paulaner Brewery, founded by monks in 1634, has played a significant role in establishing Munich’s reputation as the “Beer Center of the World”. The small order of enterprising Paulaner monks began its tradition of slow, handcrafted brewing and changed brewing history forever. During the Lenten period .forced to fast only on bread and water, the monks reasoned that beer could be brewed as “liquid bread” and not violate their Lenten promise. The Paulaner monks liquid bread became the world’s first Double Bock Paulaner Salvator. Today, Paulaner is a company built on five centuries of uncompromising quality, purity and respect for tradition and has managed to establish a new category of exclusivity on the international beer market. All the beers from Paulaner are brewed in Munich without any exceptions and strictly in adherence to the German Reinheitsgebot (Purity Law) of 1516 that mandates that beer consist only of barley, hops, yeast and water. The particularly long brewing procedures ensure that the beer remains fresh even in the hottest region. Naturally free of preservatives, Paulaner offers the right beer for every epicure and every occasion.

Paulaner Salvator, with its strong, typically malty flavour, is what you could call the “original” Paulaner. The bottom-fermented “Doppelbock” beer combines the finest hops and dark barley malt. The Paulaner monks used to drink Salvator as food substitute during Lent. The most famous master brewer Frater Barnabas, took over Paulaner monastery brewery in 1773. His original recipe remains practically unchanged to this day. In order to preserve the original, Paulaner registered the name “Salvator” with the patent office in 1896.

Wheat Beer Dark has a much higher proportion of dark wheat malt than Wheat Beer Natural because it is produced in a special process. Which is what gives it its irresistible chestnut-brown color.
