BAYRISCHER APFELSCHMARRN (Bavarian Pancake Bits with Apple)
This dish is popular in Southern Germany and Austria and it can be eaten for breakfast, lunch, or dinner. You need:
5 apples of choice, 1 stick of butter, 9 oz plain flour, 4 egg yolks, salt, 1-2 tablespoons sugar, ½ tablespoon vanilla extract, 3 cups of milk, 4 egg whites, raisins (optional), powdered sugar for sprinkling.
Peel, core, and dice apples, stew in butter, let cool. In a bowl, mix flour, egg yolks, some milk, salt, sugar, vanilla. Stirr constantly to avoid lumps. Mix batter with apples and raisins. Whisk egg whites until stiff, fold into batter. Heat butter in frying pan, pour in enough batter to cover the bottom. Fry the underside to a light yellow and tear into small pieces with two forks. Turn frequently until browned. Set aside. Repeat with more batter. Serve sprinkled with powdered sugar. Only takes about 10 minutes to make.
